Next, the chocolate must be tempered -slowly heated and cooled while stirring. Properly tempered chocolate has a shiny, flawless appearance. It feels firm and breaks off with a snap when you bite into it and it melts smoothly in your mouth, allowing you to fully enjoy the flavor. We pour our hometown pride in with the tempered chocolate into bitesize Buffalo molds. Once the Buffaloes are cooled and demolded, they are carefully boxed so that they can be enjoyed by the eyes, as well as the taste buds!
